This probably isn't a sushi recipe, but I love it anyway. It is nice to have before or after sushi too! It is so light and refreshing.
So here goes. You will need the following ingredients:
1/2 cup rice vinegar
2 tablespoons of sugar
1 teaspoon soy sauce
1/4 ounce wakame (seaweed dried and ready to use)
2 Japanese or English Cucumbers
1 cup of water
1 teaspoon salt
First, soak the wakame about 5 minutes in cold water until it softens. About 5 minutes.
Next, mix the vinegar, sugar and soy sauce in a bowl. Mix until the sugar is dissolved.
Slice the cucumbers very thin and then soak in 1 cup of water (mixed with the 1 teaspoon of salt) for about 5 minutes. Drain the cucumbers and squeeze out any extra water.
Now, toss the cucumbers and wakame with the vinegar mixture and serve!
